Creamed Spinach (Low-fat; Low-carb!)

I've said it before, and I'll say it again (probably more than once), not many things are more comforting than those that are warm and creamy. If you're like me, the chillier the weather, the more comfort you need. But I don't want to skip my veggies. When the need for comfort comes a-knockin', I grab some spinach and whip up a batch of my low-fat, low-carb Creamed Spinach. Creamed Spinach (Low-fat; Low-carb!)
1 10-oz. package of frozen, chopped spinach, defrosted and squeezed dry
1 T. buttery spread, such as Smart Balance (or butter, if desired)
1 T. finely minced sweet onion, preferably Vidalia or Texas Sweet
1/2 block reduced-fat cream cheese (or regular, if desired)
1/4 c. grated Parmesan cheese
1/4 t. pepper, or to taste
1/4 t. salt, or to taste
dash of nutmeg

Melt buttery spread over medium heat. Saute minced onions until soft. Add spinach and cook until heated through. Add cream cheese and Parmesan cheese. Stir until cheeses are melted. Add seasonings. Taste and adjust salt, pepper, and nutmeg as desired.
