I admit that, other than seeing my family, homemade cornbread dressing and cranberry sauce are my favorite part of thanksgiving. The other day I realized that, at a crucial moment, I was out of cranberry sauce. The horror! Ingenuity kicked in, and I made this tasty treat and LOVED it. Try it in a pinch or just for a new twist on an old favorite.
Cranberry Pecan Relish
1 bag dried cranberries
1 cup orange juice
toasted pecans
water
Place the cranberries and juice in a sauce pan and simmer over medium-low heat, adding water as needed to cook the cranberries to plumpness. Once they are plumped, keep berries over low heat until a thick sauce forms. Add toasted pecans just before serving.
